How to Order

The ordering process begins with the start of the olive harvest season, around mid to end of October. Boli informs the distribution hubs, sets deadlines, and coordinates pre-orders. If an agreement with the Producer Group already exists, prices and orders are binding; otherwise, estimated prices are given and orders are finalised later.

If the final price increases, orders can be changed or cancelled; if it is equal to or lower than the estimate, orders become binding. In the case of limited production, a priority queue applies.

The producer price is set at the start of the season based on quality (acidity), not solely on market conditions. Price adjustments apply based on acidity levels, and oil with very high acidity is not accepted.

The final product cost is derived from the cost of production plus additional expenses (packaging, transport, storage, taxes, etc.).

Storage takes place immediately and in separate areas depending on quality, with the aim of preserving the product's characteristics and minimising movements that degrade quality.

Overall, the system seeks to bring producers and consumers into direct contact without intermediaries, reducing costs and fostering a fair, sustainable, and environmentally friendly mode of production — to the benefit of all community members.
