'Boli' Social Cooperative

'Boli' is a Social Cooperative active, among other things, in the production and distribution of high-quality olive oil in limited quantities, with an emphasis on sustainability, cooperation, and a direct producer–consumer connection.

The Cooperative began operating in early 2026, as the natural continuation of its members' previous collective activities. Their track record is characterised by active participation in collective ventures and a systematic engagement with the production of quality agricultural products.

The members have many years of experience in producing and distributing high-quality extra virgin olive oil, as well as in developing alternative distribution models that reduce intermediaries and foster a fair relationship between producer and consumer.

Drawing on this knowledge and the values of cooperation, transparency, and quality, 'Boli' seeks to:

  • strengthen its productive capacity
  • develop innovative and more effective practices in the standardisation and distribution of the product
  • expand the distribution network without intermediaries
  • strengthen direct producer–consumer relationships by building an Olive Oil Community
  • improve consumer behaviour through better information

'Boli' aims to create a new, mutually beneficial (win–win) relationship between the producer and the user of the product, while promoting a fair and sustainable agri-food model. As a Social Cooperative, it is not permitted to distribute profits to its members.

Experiential Learning

Participation in the production process (harvest, pressing, separation, tasting) helps consumers develop a deeper understanding of the product.

As part of its experiential workshops, BOLI organises 'tasting workshops' at the farm, which is open to visitors.

Every olive harvest season, Boli hosts members of the olive oil community who wish to actively take part in the olive picking process.

Uses of Olive Oil

Consumers should be aware of the many uses of olive oil: in cooking, in baking, as a natural preservative, and even in medicinal or traditional applications (e.g. with herbs).

Boli organises workshops at its premises and on local tours, exploring practical applications of olive oil (e.g. recipes for food, sweets, soap-making, and other traditional remedies).

The Market — Producer–Consumer Relationship

The producer–consumer relationship has been lost within a chain that lacks transparency. Impersonal dealings, conflicting interests, unnecessary intermediaries.

The solution exists:

  • A more direct connection
  • Fewer intermediaries
  • Clear and stable prices

A fair relationship for everyone. A genuine win–win situation.

BOLI, drawing on the long experience of its producer-members, has developed a network without intermediaries, based on a direct relationship between the producer and the consumer of olive oil. Having started from personal contacts and a small, limited-scale network, it aims to expand gradually, with the goal of building a wider community around olive oil.

The Production–Consumption Chain Model

Within the olive oil activity, the production and consumption chain is broken down into two key actors, once the presence of intermediaries is excluded:

  • The Producer, who represents the production side and is collectively organised in the Producer Group.
  • The User/Consumer, who represents the distribution side and is collectively organised in the Distribution Group.

The production side (Producer Group) includes:

  • The production of the olive oil
  • Storage
  • And standardisation

The distribution side (Distribution Ggroup) includes:

  • Placing orders
  • Managing transport and delivery to the end user

'Boli' operates functionally on both the production side, as a member of the Producer Group, and partly in the distribution process, while also maintaining a mediating and coordinating role in connecting the Producer Group and the Distribution Groups.

Transparency and a Relationship of Trust

A fundamental prerequisite for developing a relationship of trust is ensuring a high level of transparency on the production side. To this end, it is considered essential:

  • That the identity of the producers is known
  • That visits to the olive groves are possible
  • That the production and bottling process is accessible
  • That there is ongoing communication about the stages of production, storage conditions, and the quality characteristics of the product

BOLI hosts Community members who are interested in getting to know the olive oil production processes first-hand.

Producer Group

The producers form a collective structure in the form of a Producer Group. 'Boli' participates as a sub-group of producers, with members who have been core producers for more than fifteen years.

The Producer Group establishes a unified framework of rules for production and storage, aims to ensure high and consistent quality, and requires mandatory compliance from all members.

The Producer Group maintains an organised database with members' plots, their geographic location, the number of olive trees, the area, and the Maximum Expected Production (MEP) per plot. The total maximum possible production (MAX) is defined as: MAX = sum of all MEPs.

The actual annual production (OIL) is generally lower than the MAX.

Collaborating Producers

Beyond the members of the Producers Group, Collaborating Producers may also participate. These are producers who cannot actively join the Producers Group but share the principles and values of the cooperative, collaborate with 'Boli' and/or the Producers Group, and commit to adhering to the same regulatory and quality framework.

Distribution Group

For products to reach consumers from producers in a fair and organised way, cooperation is needed. This is the role taken on by the Distribution Group.

Such collective initiatives already exist, such as Food Cooperatives (FoodCoops), where people come together to source products collectively, place joint orders, and buy directly from producers.

For those who are not part of such groups, 'Boli' makes it possible to form more informal, temporary groups, so that orders can be gathered, distribution organised more easily, and more people can take part.

How the Network Works

The Distribution Group operates as a network of small consumer groups — whether organised cooperatives or simply groups of people working together.

Each group has a representative (a Hub), who collects orders, coordinates collection, and maintains communication with the cooperative.

Communication is straightforward: the cooperative informs the Hubs, the Hubs inform their members. Members can communicate with their Hub or, when necessary, directly with the cooperative.

The Distribution Group, together with the Producer Group, is a core part of the venture. It is built on relationships of trust and continues to evolve, so that it becomes more open, more effective, and engages ever more people.
